Poppa Garth’s Blackened Pork Chops

to all of you, Daddies!

The late father of my husband, aka ‘Poppa Garth’ to his grandkids, loved to barbecue. Today, to celebrate Poppa Garth, my late father Gerry, and all wonderful fathers out there,  I share with you the recipe for   Poppa Garth’s grilled masterpiece: Blackened Pork Chops.
Note: To those of you who are non-meat eaters, you can easily convert this to vegan by substituting the pork chops with tofu or tempeh.

Blackened Pork Chops

Ingredients:
4-6 centre cut pork chops (at least 1″ thick)
1/2 cup soy sauce
2 Tablespoons honey
1 garlic clove (crushed) or minced garlic

Directions:
  1. Mix all ingredients together, heat up and whisk to blend well.
  2. Put pork chops in a glass or plastic dish. Pour marinade over, cover with saran wrap and leave in refrigerator overnight.
  3. In the morning, flip the pork chops over and leave covered in the refrigerator till ready to barbecue.
